IBERICO PORK

We tried and tested this last week and combined comments were “the best pork ever eaten”. It was sampled with our chimichurri which gave us a little feeling of nostalgia to better times on holidays in Spain with the sun shining.

This is an interestingcut taken from the neck end of pork loin. This is from free range Iberian Black Pigs. Their diets consist for acorns found on the forest floor in the woodlands of the Iberian Peninsula.

Don’t be fooled by the the fat marbling this melts like actual butter when cooked and is so tender. This pork is best eaten slightly pink.

  • This beef has a fine marbling of fat throughout the meat which sometimes is not apparent to the eye. When its cooking this fine marbling of fat is basting the meat and the results are truly exceptional. We think this beef has a far better flavour than wagu beef.
