2 x 250g-300g Pork Chops
We tasted this for the first time recently and can vouch that it is a truly a wonderful pork chop. We have never tasted anything in the UK that rivals it (Iberico being on a par).
If you can we suggest to BBQ it but at home when we can't rely on the great British weather. Start this pork chop in a cold pan on its back and slowly caramelise the fat similar to the way you would render the fat in a duck breast. This can take up to 20 minutes and even longer the slower the better for this. Then turn the heat up and brown both sides of the chop. This can be served pink like the Iberico. A taste sensation!
