We tried and tested this and combined comments were “the best pork ever eaten”. It was sampled with our chimichurri which gave us a little feeling of nostalgia to better times while on holidays in Spain with the sun shining eating al fresco.
This cut is called Iberico pluma. This is an interesting cut taken from the neck end of pork loin. The translation is the 'feather' cut and is from free range Iberian Black Pigs. Their diets consist for acorns found on the forest floor in the woodlands of the Iberian Peninsula.
Don’t be concerned by the the fat marbling this melts like actual butter when cooked and is so tender. This pork is best eaten slightly pink.
