500g Thick Cut Dry Aged Ex-Dairy Sirloin Steak (Bone in)
Retired Dairy Cows. Following a four year dairy cycle our cows retire and naturally grow fat. This cut comes from Simmental or Holstein Friesian cattle. This type of beef originated in the Basque Country and is often referred to PRE-ORDER ITEM as the “Basque Cider House Steak” after a tradition of Basque farmers exchanging beef for cider at the Cider Houses. This beef has a fine marbling of fat throughout the meat which sometimes is not apparent to the eye. When its cooking this fine marbling of fat is basting the meat and the results are truly exceptional. We think this beef has a far better flavour than wagu beef.
